Rustic White Chicken Chili

Ingredients

1 lb boneless skinless chicken breasts
2 tbsp olive oil
1 large onion, diced
2 cloves garlic, minced
2 cups chicken broth
1 tsp ground cumin
1/2 tsp smoked paprika
1/4 tsp cayenne pepper
2 cans (15 oz each) white beans, drained and rinsed
1 can (4 oz) diced green chilies
1/2 cup sour cream
1/2 cup heavy cream
Salt and pepper to taste
1/4 cup fresh cilantro, chopped
1 lime, cut into wedges

Instructions

1. Heat olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sautéing for 3-4 minutes until the onion is translucent.
2. Add the chicken breasts to the pot, searing each side for 3-4 minutes.
3. Pour in the chicken broth, cumin, smoked paprika, cayenne pepper, salt, and pepper. Bring to a simmer and cover the pot.
4. Cook the chicken for 20 minutes or until fully cooked. Remove the chicken from the pot and shred it using two forks.
5. Return the shredded chicken to the pot, adding the white beans and diced green chilies. Simmer for an additional 10 minutes.
6. Reduce the heat to low, stirring in the sour cream and heavy cream until fully incorporated.
7. Serve hot, garnished with fresh cilantro and lime wedges.

Storage

Allow the chili to cool completely and store it in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, transfer the chili to a pot and warm over medium heat, stirring occasionally, until heated through. Alternatively, reheat in the microwave in 1-minute intervals, stirring in between.
