Ingredients
2 1/2 cups all-purpose flour
1/2 cup cold unsalted butter
1/2 cup vegetable shortening
6 to 8 tablespoons ice water
1/2 teaspoon salt
6 cups thinly sliced peeled apples (Granny Smith or Honeycrisp)
3/4 cup granulated sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 cup all-purpose flour
1/4 cup caramel sauce
1 tablespoon lemon juice
1 tablespoon cold unsalted butter, diced
1 egg yolk
1 tablespoon water
1 tablespoon coarse sugar for sprinkling
Instructions
1. Preheat the oven to 425°F (220°C).
2. To make the crust, combine flour and salt in a large bowl. Cut in butter and shortening until mixture resembles coarse crumbs.
3. Stir in ice water, a tablespoon at a time, until dough forms a ball.
4. Divide dough in half, shape each into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
5. In a large bowl, toss apples with sugar, cinnamon, nutmeg, cloves, flour, caramel sauce, and lemon juice.
6. Roll out one disk of dough on a floured surface to fit a 9-inch pie plate. Place in pie plate and fill with apple mixture.
7. Dot with diced butter. Roll out the second disk and place over filling. Seal and flute the edges. Cut slits in the top to allow steam to escape.
8. Beat egg yolk with water and brush over crust. Sprinkle with coarse sugar.
9. Bake for 15 minutes in the preheated oven. Reduce temperature to 350°F (175°C) and continue baking for 35 to 40 minutes, or until apples are tender and crust is golden brown.
10. Cool on a wire rack before serving.
Storage
Store the pie covered in the refrigerator for up to 3 days.
Reheating
To reheat, warm slices in a preheated oven at 350°F for 10-15 minutes or until heated through.
