Rustic Sausage & Spinach Breakfast Casserole

A hearty and satisfying breakfast casserole that combines savory sausages, fresh spinach, and a cheesy egg mixture, perfect for weekend brunches or special gatherings.

Ingredients

1 lb ground sausage
2 cups fresh spinach, chopped
8 large eggs
1 cup whole milk
1 cup sharp cheddar cheese, shredded
1/2 cup onion, chopped
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp nutmeg
1 tbsp olive oil
1/4 cup green onions, sliced for garnish

Instructions

1. Preheat the oven to 375°F.
2. In a skillet, heat olive oil over medium heat and cook the chopped onion until translucent.
3. Add ground sausage to the skillet and cook until browned.
4. Stir in chopped spinach and cook until wilted, then remove from heat.
5. In a large bowl, whisk together eggs, milk, salt, pepper, and nutmeg.
6. Stir in shredded cheddar cheese into the egg mixture.
7. In a greased 9x13 inch baking dish, layer the sausage and spinach mixture evenly.
8. Pour the egg and cheese mixture over the sausage and spinach in the baking dish.
9. Bake in the preheated oven for 35-40 minutes or until the egg is set and the top is golden brown.
10. Remove from the oven, let cool slightly, garnish with sliced green onions, and serve warm.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat individual servings in the microwave for 1-2 minutes until warmed through.
