Ingredients
1 medium eggplant, cubed
2 medium zucchinis, sliced
1 red bell pepper, diced
1 yellow bell pepper, diced
4 ripe tomatoes, chopped
2 cloves garlic, minced
1 large onion, sliced
1/4 cup olive oil
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
Instructions
1. Heat olive oil in a large pan over medium heat.
2. Add onions and garlic, sauté until translucent.
3. Stir in eggplant and cook until it begins to soften.
4. Add zucchinis and bell peppers, cook for 5 minutes.
5. Mix in tomatoes, thyme, rosemary, salt, and pepper.
6. Reduce heat to low, cover, and simmer for 30 minutes, stirring occasionally.
