Rustic Orange and Lavender Scones

Ingredients

2 cups all-purpose flour
1/4 cup granulated sugar
1 tbsp baking powder
1/2 tsp salt
1/2 tsp dried lavender
1 tbsp orange zest
1/2 cup unsalted butter, chilled and cubed
2/3 cup heavy cream
1 large egg
1 tsp vanilla extract
1/4 cup fresh orange juice

Instructions

1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
2. In a large bowl, whisk together the flour, sugar, baking powder, salt, dried lavender, and orange zest.
3. Add the cubed butter into the flour mixture and use a pastry cutter or your fingertips to work the butter into the flour until it resembles coarse crumbs.
4. In a separate bowl, whisk together the heavy cream, egg, vanilla extract, and orange juice.
5. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not over-mix.
6. Turn the dough out onto a lightly floured surface and gently knead it into a 1-inch thick disk.
7. Cut the dough into 8 wedges and place them onto the prepared baking sheet.
8. Bake for 15-18 minutes or until the scones are golden brown on the edges.
9. Remove from the oven and allow to cool slightly before serving.

Storage

Store the scones in an airtight container at room temperature for up to 2 days, or freeze for up to 1 month.

Reheating

To reheat, place in a preheated oven at 350°F for 5 minutes or microwave for 20-30 seconds.
