Rustic Mushroom Marinara

Ingredients

1 tbsp olive oil
1 medium onion, finely chopped
2 cloves garlic, minced
1 lb cremini mushrooms, sliced
1 28-oz can crushed tomatoes
2 tbsp tomato paste
1 tsp dried oregano
1 tsp dried basil
1/2 tsp red pepper flakes
Salt and pepper to taste
1/4 cup fresh basil leaves, torn
1/4 cup grated Parmesan cheese (optional)

Instructions

1. Heat olive oil in a large saucepan over medium heat.
2. Add the chopped onion and garlic, sauté until translucent.
3. Stir in the mushrooms and cook until they release their moisture and begin to brown.
4. Add the crushed tomatoes, tomato paste, oregano, basil, and red pepper flakes.
5. Season with salt and pepper.
6. Let simmer on low heat for 20 minutes, stirring occasionally.
7. Stir in fresh basil before serving.
8. Top with Parmesan cheese if desired.

Storage
