Rustic Italian Sausage Soup
This hearty Italian Sausage Soup combines savory flavors of sausage, fresh vegetables, and herbs to create a comforting dish perfect for any occasion.

Ingredients
1 lb Italian sausage
1 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
2 carrots, sliced
2 celery stalks, sliced
1 can (14.5 oz) diced tomatoes
4 cups chicken broth
1 tsp dried basil
1 tsp dried oregano
Salt and pepper to taste
2 cups kale, chopped
1/2 cup grated Parmesan cheese
Instructions
1. In a large pot, heat olive oil over medium heat. Add the sausage, breaking it into small pieces, and cook until browned.
2. Add the chopped onion, garlic, carrots, and celery to the pot. Sauté until the vegetables are tender.
3. Stir in the diced tomatoes, chicken broth, basil, oregano, salt, and pepper. Bring the mixture to a boil.
4. Reduce the heat to a simmer and cook for 20 minutes.
5. Add the chopped kale and cook for an additional 5 minutes.
6. Serve hot, garnished with grated Parmesan cheese.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently on the stovetop over medium heat until warmed through.
