Rustic Italian Chicken Cacciatore
A rustic Italian Chicken Cacciatore dish that combines tender chicken with a medley of fresh vegetables and aromatic herbs, cooked in a rich tomato and wine sauce.

Ingredients
4 lbs bone-in chicken thighs
1/4 cup olive oil
1 large yellow onion, sliced
2 cloves garlic, minced
1 red bell pepper, sliced
1 green bell pepper, sliced
8 oz mushrooms, sliced
1 can (28 oz) crushed tomatoes
1/2 cup dry white wine
1 tsp dried oregano
1 tsp dried thyme
1/2 tsp red pepper flakes
Salt and pepper to taste
1/4 cup fresh basil, chopped
Instructions
1. Heat olive oil in a large skillet over medium-high heat.
2. Season chicken thighs with salt and pepper, then brown in the skillet, about 5 minutes per side. Remove and set aside.
3. In the same skillet, add onions and garlic; sauté until fragrant, about 2 minutes.
4. Add bell peppers and mushrooms, and cook for another 5 minutes until softened.
5. Pour in the white wine, scraping the bottom of the skillet to deglaze.
6. Stir in crushed tomatoes, oregano, thyme, red pepper flakes, and salt and pepper to taste.
7. Return chicken to the skillet, covering with the sauce.
8. Reduce heat to low, cover, and simmer for 40 minutes, or until chicken is cooked through and tender.
9. Stir in fresh basil before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently on the stovetop over medium heat until warmed through, or microwave on medium power.
