Ingredients
1 whole chicken (3-4 lbs), cut into pieces
1/4 cup olive oil
1 onion, chopped
2 cloves garlic, minced
1 cup button mushrooms, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1/2 cup red wine
1 can (28 oz) crushed tomatoes
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
1/4 cup fresh parsley, chopped
Instructions
1. Heat olive oil in a large skillet over medium-high heat. Season the chicken pieces with salt and pepper.
2. Brown the chicken pieces in the skillet for 5-7 minutes per side until golden. Remove and set aside.
3. In the same skillet, add onion and garlic, sauté for 3-4 minutes until translucent.
4. Add the mushrooms and bell peppers, cooking for another 5 minutes until they begin to soften.
5. Pour in the red wine to deglaze the pan, scraping up any browned bits from the bottom.
6. Stir in the crushed tomatoes, oregano, and basil, bringing the mixture to a simmer.
7. Return the chicken to the skillet, spooning some sauce over each piece. Cover and simmer on low heat for 45 minutes, or until the chicken is cooked through.
8. Sprinkle with fresh parsley before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a skillet over medium heat until warmed through, or microwave on medium power for 2-3 minutes.
