Ingredients
2 cups all-purpose flour
1 cup rolled oats
1/4 cup honey
1 cup warm water (110°F)
1 packet (2 1/4 tsp) active dry yeast
1 tsp salt
1 tbsp olive oil
1 tbsp unsalted butter (for greasing)
Instructions
1. In a large bowl, combine warm water and honey, stirring until honey dissolves.
2. Sprinkle yeast over the honey water and let sit for about 5 minutes, until foamy.
3. Add the flour, rolled oats, salt, and olive oil to the yeast mixture. Stir until a dough forms.
4. Turn the dough out onto a floured surface and knead for about 8-10 minutes, until smooth and elastic.
5. Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour, or until doubled in size.
6. Preheat your oven to 375°F (190°C).
7. Punch the dough down and shape it into a loaf. Place it into a greased loaf pan.
8. Cover the loaf with a cloth and let it rise for another 30 minutes.
9. Bake in the preheated oven for 30-35 minutes, or until the bread sounds hollow when tapped.
10. Let cool on a wire rack before slicing and serving.
Storage
Store in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
Reheating
Reheat slices in the oven at 350°F (175°C) for 5-7 minutes or toast in a toaster until warm.
