5 cups fresh peaches, sliced
1/3 cup honey
1/4 cup brown sugar

1 cup granulated sugar
1/2 cup unsalted butter, chilled and cubed
1 1/2 tsp baking powder
1/2 tsp salt
1 cup whole milk
1 tbsp cinnamon

Instructions

1. Preheat your oven to 350°F.
2. In a saucepan over medium heat, combine the peaches, honey, brown sugar, ginger, lemon juice, and vanilla extract. Stir occasionally until the mixture begins to simmer.
3. Meanwhile, in a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.
4. Add the cubes of butter to the dry ingredients and use a pastry cutter or fork to blend until the mixture resembles coarse crumbs.
5. Pour the milk into the dry ingredients and mix until just combined to form a batter.
6. Spread the peach mixture evenly in a 9x13-inch baking dish, followed by dollops of the batter over the fruit.
7. Sprinkle the top with cinnamon for added flavor.
8. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the fruit is bubbly.
9. Allow the cobbler to cool slightly before serving.
