Rustic Herbed Potato Soup

Ingredients

2 lbs Yukon Gold potatoes, peeled and diced
4 cups chicken broth
1 cup heavy cream
1/2 cup sour cream
1 medium onion, diced
3 cloves garlic, minced
2 tbsp olive oil
1 tbsp fresh thyme, chopped
1 tbsp fresh rosemary, chopped
1 tsp salt
1/2 tsp black pepper
1/4 cup green onions, sliced for garnish

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add diced onions and sauté until translucent, about 5 minutes.
3. Stir in minced garlic, thyme, and rosemary, cooking for another 2 minutes.
4. Add the diced potatoes, chicken broth, salt, and pepper; bring to a boil.
5. Reduce heat to low, cover, and simmer for 20 minutes or until potatoes are tender.
6. Remove from heat, stir in heavy cream and sour cream.
7. Use an immersion blender to blend the soup until smooth.
8. Serve hot, garnished with sliced green onions.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently on the stovetop over low heat, stirring occasionally until hot.
