Rustic Herb Tomato Spaghetti Sauce

Ingredients
2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
2 lbs ripe tomatoes, chopped
1/4 cup tomato paste
1/2 cup red wine
1 tbsp sugar
1 tsp salt
1/2 tsp black pepper
1 tbsp fresh basil, chopped
1 tbsp fresh oregano, chopped
1/2 tsp red pepper flakes (optional)
Instructions
1. Heat olive oil in a large saucepan over medium heat.
2. Add chopped onion and sauté until translucent, about 5 minutes.
3. Stir in minced garlic and cook for an additional minute.
4. Add chopped tomatoes and tomato paste, mixing well.
5. Pour in red wine and bring the mixture to a simmer.
6. Add sugar, salt, black pepper, and red pepper flakes.
7. Reduce heat to low and let the sauce simmer for 30 minutes, stirring occasionally.
8. Stir in fresh basil and oregano, and cook for another 5 minutes.
9. Use immediately over cooked pasta or let it cool for storage.
Storage
Store any leftover sauce in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
Reheating
Reheat sauce in a saucepan over medium heat, stirring occasionally, until warmed through.
