Ingredients

2 1/2 cups all-purpose flour
1 cup unsalted butter, chilled and cubed
1 tsp sea salt
1 tsp dried thyme
1 tsp dried rosemary
1/4 cup ice water
1 tbsp apple cider vinegar

Instructions

1. In a large bowl, whisk together the flour, salt, thyme, and rosemary until well combined.
2. Add the cubed butter to the flour mixture and using a pastry cutter or your fingers, blend until the mixture resembles coarse crumbs.
3. Mix in the apple cider vinegar and gradually drizzle in ice water, stirring with a fork until the dough begins to come together.
4. Divide the dough into two disks, wrap each in plastic wrap, and refrigerate for at least 1 hour or up to 2 days.
5. When ready to use, roll out the dough on a lightly floured surface to fit your pie dish.

Storage

Wrap tightly in plastic wrap and store in the refrigerator for up to 3 days or freeze for up to 3 months.

Reheating

Allow the frozen or refrigerated dough to come to room temperature before rolling out and baking as desired.
