Rustic Herb-Infused Beef Stew

This delightful rustic beef stew combines tender chunks of beef with a medley of vegetables, slowly simmered to perfection and infused with aromatic herbs and spices.

Ingredients

2 lbs beef chuck roast, cut into 1-inch cubes
2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
3 carrots, sliced
3 ribs celery, sliced
2 large potatoes, diced
1 cup peas
4 cups beef broth
2 tbsp tomato paste
1 tsp dried thyme
1 tsp dried rosemary
2 bay leaves
Salt and pepper to taste

Instructions

1. Heat olive oil in a large pot over medium heat. Add the beef and brown on all sides.
2. Remove beef and set aside. In the same pot, add onions and garlic; sauté until onions are translucent.
3. Stir in carrots, celery, and potatoes, cooking for about 5 minutes.
4. Return beef to the pot and pour in beef broth. Stir in tomato paste, thyme, rosemary, and bay leaves.
5. Bring to a boil, then reduce heat to low and cover. Simmer for 2 hours, or until beef is tender.
6. Add peas in the last 10 minutes of cooking. Season with salt and pepper before serving.

Storage

Store leftover stew in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a pot over low heat until warmed through, stirring occasionally.
