Rustic Hearty Goulash

Ingredients
2 lbs beef chuck roast
1 tbsp olive oil
1 large onion, diced
2 cloves garlic, minced
2 carrots, sliced
1 bell pepper, diced
1 cup diced tomatoes
2 cups beef broth
1 tbsp paprika
1 tsp caraway seeds
1/2 tsp salt
1/2 tsp black pepper
1 tbsp apple cider vinegar
1 bay leaf
2 tbsp sour cream
2 tbsp fresh parsley, chopped
Instructions
1. Cut the beef chuck roast into 1-inch cubes.
2. In a large pot, heat olive oil over medium-high heat and brown the beef cubes in batches.
3. Remove the beef and set aside. In the same pot, add onion and garlic; sauté until softened.
4. Add carrots and bell pepper; cook for an additional 5 minutes.
5. Stir in diced tomatoes, beef broth, paprika, caraway seeds, salt, and black pepper.
6. Return beef to the pot, then add apple cider vinegar and bay leaf.
7. Bring to a boil, reduce heat, cover, and let simmer for 1.5 hours until meat is tender.
8. Remove bay leaf, stir in sour cream, and garnish with fresh parsley before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months.
Reheating
Reheat in a saucepan over medium heat until warmed through, or microwave on high for 2-3 minutes, stirring halfway.
