Ingredients

1 lb ground beef
1 cup diced carrots
1 cup diced potatoes
1/2 cup diced onions
3 cloves garlic, minced
1 cup beef broth
2 tbsp tomato paste
1 tsp dried thyme
1 tsp dried rosemary
1/2 tsp black pepper
1/2 tsp salt
1 tbsp olive oil
2 sheets puff pastry
1 egg, beaten

Instructions

1. Preheat the oven to 375°F.
2. In a large skillet, heat olive oil over medium heat and sauté onions and garlic until translucent.
3. Add ground beef and cook until browned.
4. Stir in carrots and potatoes, cooking for another 5 minutes.
5. Mix in tomato paste, beef broth, thyme, rosemary, salt, and pepper, and let the mixture simmer for 10 minutes until thickened.
6. Roll out the puff pastry and line a 9-inch pie dish with one sheet.
7. Fill the pastry with the beef mixture.
8. Cover with the second sheet of pastry, sealing the edges.
9. Brush the top with beaten egg.
10. Bake for 35-40 minutes or until the crust is golden brown.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat individual slices in the oven at 350°F for 10-15 minutes until heated through.
