Ingredients
3 lbs ripe tomatoes (peeled and chopped)
1 large onion (finely chopped)
3 cloves garlic (minced)
1 green bell pepper (chopped)
1/4 cup olive oil
1 tbsp sugar
1 tsp dried basil
1 tsp dried oregano
1/2 tsp red pepper flakes
Salt and pepper to taste
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onions and garlic, sauté until onions are translucent.
3. Stir in green bell pepper, cook for 2 minutes until softened.
4. Add tomatoes, sugar, basil, oregano, and red pepper flakes.
5. Season with salt and pepper, bring to a boil.
6. Reduce heat and simmer uncovered for 45 minutes, stirring occasionally.
7. Taste and adjust seasoning if necessary.
8. Remove from heat and let cool slightly before serving.
Storage
Store any leftover stewed tomatoes in an airtight container in the refrigerator for up to 5 days.
