Rustic Garden Spaghetti Sauce

Ingredients

2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
1 red bell pepper, chopped
2 carrots, diced
1 zucchini, chopped
28 oz can crushed tomatoes
2 tablespoons tomato paste
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon red pepper flakes
Salt and pepper to taste
1/4 cup fresh basil leaves, chopped
Parmesan cheese, for serving

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add onion and garlic, and sauté until the onion is translucent.
3. Add red bell pepper, carrots, and zucchini, and cook until tender.
4. Stir in crushed tomatoes, tomato paste, oregano, basil, red pepper flakes, salt, and pepper.
5. Bring the mixture to a simmer and cook for 30 minutes, stirring occasionally.
6. Adjust seasoning if necessary and stir in fresh basil before serving.
7. Serve hot over your favorite pasta with a sprinkle of Parmesan cheese.

Storage

Store the sauce in an airtight container in the refrigerator for up to 5 days.

Reheating

Reheat in a saucepan over low heat until warmed through, or microwave on medium power, stirring occasionally.
