Rustic Cranberry-Apple Beef Stew

A heartwarming beef stew with a delightful twist of cranberry and apple, perfect for cozy evenings.

Ingredients

2 lbs beef chuck, cubed
1 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
2 cups beef broth
1 cup cranberry juice
1 cup apple cider
2 tbsp tomato paste
2 large carrots, sliced
2 stalks celery, chopped
2 medium potatoes, cubed
1/2 cup dried cranberries
1 tsp thyme
1 tsp rosemary
Salt and pepper to taste

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add beef cubes and sear until browned on all sides, then remove from pot.
3. In the same pot, add onions and garlic, sauté until translucent.
4. Stir in tomato paste, cook for 1 minute.
5. Pour in beef broth, cranberry juice, and apple cider, scrape the pot to deglaze.
6. Return beef to pot and bring to a simmer.
7. Add carrots, celery, potatoes, dried cranberries, thyme, rosemary, salt, and pepper.
8. Cover and simmer on low heat for 2 hours or until beef is tender.
9. Adjust seasoning to taste before serving.

Storage

Allow to cool to room temperature, transfer to airtight containers, and refrigerate for up to 3 days.

Reheating

Reheat on the stovetop over medium heat until warmed through, stirring occasionally.
