Ingredients
2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
2 carrots, sliced
2 celery stalks, sliced
1 large potato, diced
1 sweet potato, diced
1 cup butternut squash, diced
6 cups vegetable broth
1 can (15 oz) diced tomatoes
1 tsp dried thyme
1 tsp dried rosemary
1 tsp salt
1/2 tsp black pepper
1/4 cup fresh parsley, chopped
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and minced garlic, sauté until translucent.
3. Stir in carrots and celery, cook for 5 minutes until slightly softened.
4. Add diced potatoes, sweet potato, and butternut squash, stir well.
5. Pour in vegetable broth and canned tomatoes, stir to combine.
6. Season with thyme, rosemary, salt, and black pepper.
7. Bring the mixture to a boil, then reduce heat and let simmer for 30 minutes, or until vegetables are tender.
8. Stir in fresh parsley before serving.
Storage
Store the soup in an airtight container in the refrigerator for up to 4 days.
Reheating
Reheat in a saucepan over medium heat until warm, or microwave in a suitable container until hot.
