Ingredients

1 large head of cauliflower (about 2 lbs)
2 tablespoons olive oil
1 teaspoon sea salt
1/2 teaspoon black pepper
1 lemon (zested and juiced)
1 tablespoon fresh thyme leaves
1/4 cup grated Parmesan cheese (optional)

Instructions

1. Preheat your oven to 425°F (220°C).
2. Cut the cauliflower into bite-sized florets and place them in a large mixing bowl.
3. Drizzle olive oil over the florets, then sprinkle with sea salt and black pepper. Toss until evenly coated.
4. Spread the cauliflower onto a baking sheet in a single layer.
