Roasted Acorn Squash Delight

Ingredients
1 medium acorn squash
2 tbsp olive oil
1 tbsp brown sugar
1 tsp ground cinnamon
1/2 tsp nutmeg
Salt and pepper to taste
Instructions
1. Preheat the oven to 400°F (200°C).
2. Cut the acorn squash in half lengthwise and scoop out the seeds.
3. Brush the flesh of each half with olive oil.
4. Sprinkle brown sugar, cinnamon, nutmeg, salt, and pepper evenly over the cut sides.
5. Place the squash halves cut-side up on a baking sheet.
6. Roast in the preheated oven for 45-50 minutes, or until the flesh is tender and easily pierced with a fork.
7. Remove from the oven and let cool slightly before serving.
Storage
Store leftover squash in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in the oven at 350°F (175°C) for 10-15 minutes or until warmed through.
