Ingredients
8 oz semisweet chocolate, finely chopped
1/2 cup heavy cream
1 tsp vanilla extract
1/4 cup unsweetened cocoa powder (for coating)
Instructions
1. Place the chopped chocolate in a heatproof bowl.
2. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
3. Pour the hot cream over the chopped chocolate and let it sit for 5 minutes.
4. Stir the mixture gently until the chocolate is completely melted and the ganache is smooth.
5. Stir in the vanilla extract until fully incorporated.
6. Cover the bowl and refrigerate for at least 2 hours until firm.
7. Once firm, use a small scoop or spoon to portion the ganache and roll into 1-inch balls.
8. Roll each ball in unsweetened cocoa powder to coat evenly.
9. Store the truffles in an airtight container in the refrigerator until ready to serve.
Storage
Store in an airtight container in the refrigerator for up to 2 weeks.
Reheating
Allow truffles to come to room temperature for 10-15 minutes before serving; do not reheat.
