Rich Chocolate Cake

Ingredients

1 cup unsalted butter, softened
2 cups granulated sugar
1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 teaspoon salt
2 large eggs
1 cup buttermilk
2 teaspoons pure vanilla extract
1 cup boiling water

Instructions

1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
2. In a large bowl, cream the butter and sugar until light and fluffy.
3. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
4. In another bowl, combine flour, cocoa, baking soda, baking powder, and salt.
5. Gradually add dry ingredients to the creamed mixture alternately with buttermilk, beating well after each addition.
6. Stir in boiling water until batter is smooth (batter will be thin).
7. Pour batter evenly into prepared pans.
8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
9. Allow cakes to cool in the pans for 10 minutes, then remove from pans to cool completely on wire racks.
10. Frost as desired and serve.

Storage

Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week.

Reheating

Reheat slices in the microwave for 10-15 seconds for a warm treat.
