Red Velvet Cupcakes with Cream Cheese Frosting

Ingredients
1 1/4 cups all-purpose flour
1 cup granulated sugar
1 tablespoon unsweetened cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup buttermilk
1/2 cup vegetable oil
1 large egg
1 tablespoon red food coloring
1 teaspoon vanilla extract
1/2 teaspoon white vinegar
8 oz cream cheese, softened
1/2 cup unsalted butter, softened
2 cups powdered sugar
1 teaspoon vanilla extract
Instructions
1. Preheat your oven to 350°F and line a muffin tin with cupcake liners.
2. In a large bowl, sift together the flour, sugar, cocoa powder, baking soda, and salt.
3. In another bowl, whisk together the buttermilk, vegetable oil, egg, red food coloring, vanilla extract, and vinegar until smooth.
4. Gradually add the wet ingredients to the dry ingredients and mix until just combined.
5. Fill each cupcake liner about two-thirds full with the batter.
6. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
7. Allow the cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
8. For the frosting, beat together the softened cream cheese and butter until smooth and creamy.
9. Gradually add the powdered sugar and vanilla extract, and continue beating until light and fluffy.
10. Once the cupcakes are completely cool, frost them generously with the cream cheese frosting.
Storage
Store cupcakes in an airtight container in the refrigerator for up to 5 days.
Reheating
To reheat, bring cupcakes to room temperature for about 30 minutes before serving.
