Ingredients
1 tbsp olive oil
1 clove garlic, minced
1 tsp fresh ginger, grated
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 cup broccoli florets
1 cup snap peas
1 medium carrot, julienned
1/2 cup red cabbage, thinly sliced
2 tbsp soy sauce
1 tbsp sesame oil
1 tbsp sesame seeds
Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Add minced garlic and grated ginger, sauté for 1 minute until fragrant.
3. Add sliced red and yellow bell peppers, stir-fry for 2 minutes.
4. Add broccoli florets, snap peas, carrot, and red cabbage, stir-fry for 5 minutes until vegetables are tender-crisp.
5. Stir in soy sauce and sesame oil, cook for an additional 2 minutes.
6. Sprinkle with sesame seeds before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a skillet over medium heat until warmed through, or microwave for 1-2 minutes.
