Ingredients
8 slices of white or whole wheat bread
2 tbsp butter, softened
2 cups shredded mozzarella cheese, divided into portions and dyed with food coloring (red, orange, yellow, green, blue, purple)
1/2 cup fresh spinach leaves
1/2 cup sliced cherry tomatoes
1/4 cup chopped bell peppers (red, yellow, green)
Instructions
1. Preheat a non-stick skillet over medium heat.
2. Spread butter evenly on one side of each bread slice.
3. Arrange the bread slices, buttered side down, on a clean surface.
4. Sprinkle each slice evenly with the tinted mozzarella cheese portions, ensuring a rainbow color order.
5. Add a layer of spinach leaves, sliced cherry tomatoes, and chopped bell peppers over the cheese.
6. Top with another slice of bread, buttered side up.
7. Place the sandwiches in the skillet and cook for 3-4 minutes per side or until the bread is golden brown and the cheese has melted.
