Quinoa Stuffed Pepper Soup

Ingredients
1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 cup cooked quinoa
1 can (14.5 oz) diced tomatoes
4 cups vegetable broth
1 teaspoon smoked paprika
1 teaspoon ground cumin
Salt and pepper to taste
1 cup corn kernels
Fresh cilantro, chopped (for garnish)
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add diced onion and garlic; sauté until onion is translucent.
3. Stir in bell peppers and cook for 3-4 minutes until slightly softened.
4. Add cooked quinoa, diced tomatoes, vegetable broth, smoked paprika, ground cumin, salt, and pepper.
5. Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes.
6. Stir in corn kernels and simmer for an additional 5 minutes.
7. Serve hot, garnished with fresh cilantro.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat the soup on the stovetop over medium heat until heated through, or microwave on high for 2-3 minutes, stirring halfway.
