Quinoa and Avocado Salad
A refreshing and nutrient-rich salad featuring fluffy quinoa, creamy avocado, crunchy cucumbers, and ripe cherry tomatoes, all brought together with a zesty lime dressing. This bright and colorful salad is perfect for a light lunch or as a vibrant side dish.

Ingredients
1 cup quinoa
2 cups water
1/2 teaspoon salt
1 large avocado, diced
1 cup cherry tomatoes, halved
1 cucumber, diced
1/4 cup red onion, finely chopped
1/4 cup cilantro, chopped
2 tablespoons olive oil
1 lime, juiced
Salt and pepper, to taste
Instructions
1. Rinse the quinoa under cold water. In a medium saucepan, combine the quinoa, water, and salt. Bring to a boil over medium-high heat.
2. Reduce the heat to low, cover, and simmer for 15-20 minutes or until the quinoa is fluffy and water is absorbed. Let it cool.
3. In a large bowl, combine the cooled quinoa, avocado, cherry tomatoes, cucumber, red onion, and cilantro.
4. In a small bowl, whisk together the olive oil, lime juice, salt, and pepper.
5. Drizzle the dressing over the salad and toss gently to combine. Adjust seasoning if necessary. Serve immediately.
Storage
Store in an airtight container in the refrigerator for up to 2 days. Best enjoyed fresh.
