Quick and Easy Quinoa Salad

Ingredients

1 cup quinoa
2 cups water
1 small cucumber, diced
1 cup cherry tomatoes, halved
1/2 red onion, finely chopped
1 red bell pepper, diced
1/4 cup fresh parsley, chopped
1/4 cup fresh mint, chopped
1/4 cup olive oil
1 lemon, juiced
Salt and pepper to taste

Instructions

1. Rinse the quinoa under cold water.
2. In a medium saucepan, bring the water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes until water is absorbed.
3. Fluff the quinoa with a fork and let it cool.
4. In a large bowl, combine the cooled quinoa, cucumber, cherry tomatoes, red onion, bell pepper, parsley, and mint.
5. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
6. Pour the dressing over the salad and toss to combine.
7. Serve immediately or store in the fridge.

Storage

Store in an airtight container in the refrigerator for up to 4 days.

Reheating

Enjoy cold or at room temperature. If preferred warm, gently reheat in a microwave for 30 seconds.
