Queso Fundido with Chorizo

Ingredients
1 tbsp olive oil
8 oz chorizo, casings removed and crumbled
1 small onion, finely chopped
2 cloves garlic, minced
1 jalapeño, seeded and minced
1/2 tsp smoked paprika
8 oz Oaxaca cheese, shredded
4 oz Monterey Jack cheese, shredded
1/4 cup fresh cilantro, chopped
Warm tortillas or tortilla chips for serving
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a skillet over medium heat, add olive oil and cook the chorizo until browned, about 5-7 minutes, breaking it up with a spoon.
3. Add the onion, garlic, and jalapeño to the skillet, and sauté until the onion is translucent, about 3 minutes.
4. Stir in the smoked paprika and cook for another minute. Remove from heat.
5. In an oven-safe dish, layer the cooked chorizo mixture, followed by the Oaxaca and Monterey Jack cheeses.
6. Bake in the preheated oven for 10-12 minutes, or until the cheese is bubbly and golden.
7. Remove from the oven, garnish with fresh cilantro, and serve immediately with warm tortillas or tortilla chips.
Storage
Store any leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a preheated oven at 350°F (175°C) for 10 minutes or until heated through. Alternatively, microwave in 30-second intervals until warm.
