Pumpkin Hummus

Ingredients
1 can (15 oz) chickpeas, drained and rinsed
1 cup pumpkin puree
1/4 cup tahini
3 tbsp lemon juice
2 cloves garlic, minced
1 tsp ground cumin
1/2 tsp smoked paprika
1/4 tsp ground cinnamon
Salt and pepper to taste
2 tbsp olive oil
2 tbsp water (as needed)
Pita chips or fresh vegetables for serving
Instructions
1. In a food processor, combine chickpeas, pumpkin puree, tahini, lemon juice, minced garlic, ground cumin, smoked paprika, ground cinnamon, salt, and pepper.
2. Blend the ingredients until smooth, scraping down the sides as needed.
3. With the processor running, slowly drizzle in the olive oil until fully combined.
4. If the hummus is too thick, add water a tablespoon at a time until desired consistency is reached.
5. Transfer the hummus to a serving bowl and garnish with additional olive oil and a sprinkle of paprika, if desired.
6. Serve with pita chips or fresh vegetables.
Storage
Store pumpkin hummus in an airtight container in the refrigerator for up to 5 days.
Reheating
Pumpkin hummus is best enjoyed cold or at room temperature. Reheating is not recommended as it may affect texture and flavor.
