Provençal Vegetable Medley

Ingredients
1 lb eggplant (cubed)
1 lb zucchini (sliced)
2 bell peppers (sliced)
1 large onion (sliced)
4 cloves garlic (minced)
2 lbs tomatoes (peeled and diced)
1/4 cup olive oil
1 tsp salt
1/2 tsp black pepper
1 tsp dried thyme
1 tsp dried basil
1/4 cup fresh parsley (chopped)
Instructions
1. Preheat oven to 375°F.
2. In a large baking dish, layer the eggplant, zucchini, and bell peppers.
3. In a skillet, heat olive oil over medium heat and sauté the onions and garlic until soft.
4. Add tomatoes, salt, pepper, thyme, and basil to the skillet and simmer for 10 minutes.
5. Pour the tomato mixture over the layered vegetables in the baking dish.
6. Cover with foil and bake for 45 minutes.
7. Remove foil and bake for an additional 15 minutes, until vegetables are tender and slightly caramelized.
8. Garnish with fresh parsley before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in the oven at 350°F for 15-20 minutes or until heated through.
