Prime Rib Delight

Ingredients

1 standing rib roast (6-7 pounds)
2 tbsp olive oil
2 tbsp kosher salt
1 tbsp freshly ground black pepper
4 cloves garlic, minced
2 sprigs fresh rosemary
2 sprigs fresh thyme

Instructions

1. Preheat your oven to 450°F (232°C).
2. Pat the rib roast dry with paper towels and place it on a rack in a roasting pan.
3. Rub the roast with olive oil, then season generously with kosher salt and freshly ground black pepper.
4. Spread the minced garlic evenly over the roast.
5. Tuck the rosemary and thyme sprigs under the twine string used to hold the roast together.
6. Place the pan in the oven and roast for 20 minutes.
7. Reduce the oven temperature to 325°F (163°C) and continue roasting until the internal temperature reaches your desired level of doneness (120°F for rare, 130°F for medium-rare), usually about 2-3 hours.
8. Remove the roast from the oven and let it rest for at least 20 minutes before carving.

Storage

Store any leftovers in an airtight container in the refrigerator for up to 4 days.

Reheating

Preheat the oven to 300°F. Wrap the roast in aluminum foil and heat until warmed through, about 20-30 minutes.
