Ingredients

2 lbs pork shoulder
1 onion, quartered
4 cloves garlic, smashed
2 tsp salt
1 tbsp cumin
1 tbsp dried oregano
2 tsp chili powder
1 bay leaf
8 cups water
2 cans (15 oz each) hominy, drained
1/2 cup sliced radishes
1/2 cup shredded lettuce
1/4 cup chopped onions
2 limes, cut into wedges
Chili flakes to taste

Instructions

1. In a large pot, combine pork shoulder, onion, garlic, salt, cumin, oregano, chili powder, bay leaf, and water.
2. Bring to a boil, then reduce heat and let it simmer for about 1.5 hours until the pork is tender.
3. Remove the pork, shred it, and return it to the pot.
4. Add the hominy and simmer for an additional 30 minutes.
5. Season with more salt and chili flakes if needed.
6. Serve hot, garnished with radishes, lettuce, onions, and lime wedges.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently in a pot over medium heat until warmed through, or microwave in a microwave-safe dish.
