Potato Soup

This creamy potato soup is the perfect comfort food for a cold day, blending smooth potatoes with savory broth for a hearty and satisfying meal.

Ingredients

4 large russet potatoes, peeled and cubed
1 tablespoon butter
1 medium onion, chopped
2 cloves garlic, minced
4 cups chicken or vegetable broth
1 cup heavy cream
Salt and pepper to taste
1/4 cup chopped fresh chives

Instructions

1. In a large pot, melt butter over medium heat. Add chopped onion and garlic, sauté until soft and fragrant.
2. Add cubed potatoes and broth to the pot, bring to a boil.
3. Reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
4. Use an immersion blender to puree the soup until smooth. Alternatively, blend in batches using a countertop blender.
5. Stir in heavy cream, and season with salt and pepper to taste.
6. Serve hot, garnished with fresh chives.

Storage

Allow the soup to cool to room temperature, then store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat the soup gently on the stove over medium heat, stirring occasionally, until heated through. Alternatively, microwave in a microwave-safe bowl, stirring every 1-2 minutes until hot.
