Potato Frittata
A delicious and filling Potato Frittata perfect for breakfast or brunch, featuring layers of thinly sliced potatoes, eggs, cheese, and herbs baked to perfection.

Ingredients
4 large potatoes, thinly sliced
8 large eggs
1 cup whole milk
1 cup shredded cheddar cheese
1/2 cup chopped scallions
1/4 cup chopped fresh parsley
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Preheat the oven to 375°F (190°C).
2. Heat olive oil in a large oven-safe skillet over medium heat.
3. Add thinly sliced potatoes to the skillet, cook until lightly browned, about 5-7 minutes.
4. In a bowl, whisk together eggs, milk, salt, and pepper.
5. Pour the egg mixture over the potatoes in the skillet.
6. Sprinkle cheddar cheese, scallions, and parsley evenly over the top.
7. Transfer the skillet to the oven and bake for 20-25 minutes or until the eggs are set.
8. Let cool for a few minutes before slicing and serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat slices in the microwave for 1-2 minutes or in a preheated oven at 350°F (175°C) for about 10 minutes until warmed through.
