Ingredients
1.5 lbs Brussels sprouts, halved
3 tbsp olive oil
1/4 cup pomegranate molasses
2 tbsp honey
1 clove garlic, minced
1/2 tsp salt
1/4 tsp black pepper
1/4 cup pomegranate seeds
2 tbsp chopped fresh parsley
Instructions
1. Preheat your oven to 400°F (200°C).
2. Toss the halved Brussels sprouts with olive oil, salt, and black pepper in a large mixing bowl.
3. Spread the Brussels sprouts on a baking sheet in a single layer.
4. Roast in the preheated oven for 20-25 minutes, until they are tender and golden brown.
5. While the sprouts are roasting, mix pomegranate molasses, honey, and minced garlic in a small saucepan over medium heat. Stir until heated through and well combined, about 3-4 minutes.
6. Once the Brussels sprouts are roasted, transfer them back to the mixing bowl and drizzle with the pomegranate glaze. Toss to coat evenly.
7. Return the glazed Brussels sprouts to the baking sheet and roast for an additional 5 minutes.
8. Sprinkle with pomegranate seeds and chopped parsley before serving.
Storage
Store leftover Brussels sprouts in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat the Brussels sprouts in a preheated oven at 350°F (175°C) for 10-12 minutes or until heated through.
