Pistachio and Orange Blossom Baklava

Ingredients
1 lb phyllo dough
2 cups shelled pistachios, finely chopped
1 cup unsalted butter, melted
1 cup granulated sugar
1 cup water
1/2 cup honey
2 tbsp orange blossom water
1 tsp ground cinnamon
1 tsp vanilla extract
1/4 tsp salt
Zest of 1 orange
Instructions
1. Preheat your oven to 350°F (175°C).
2. Grease a 9x13 inch baking dish with butter.
3. Layer half of the phyllo sheets, brushing each sheet with melted butter.
4. In a bowl, mix chopped pistachios, cinnamon, and orange zest.
5. Spread the pistachio mixture evenly over the phyllo layers.
6. Layer the remaining phyllo sheets, brushing each with butter.
7. Cut into diamond shapes using a sharp knife.
8. Bake for 45 minutes until golden brown.
9. In a saucepan, combine sugar, water, honey, orange blossom water, vanilla, and salt.
10. Bring to a boil, then simmer for 10 minutes.
11. Pour the syrup over the baked baklava.
12. Let it cool completely before serving.
Storage
Store baklava at room temperature in an airtight container for up to 5 days.
Reheating
Reheat the baklava in a preheated oven at 300°F (150°C) for 10 minutes.
