Peppermint Hot Chocolate Brownies

Ingredients

1 cup unsalted butter
2 cups granulated sugar
1 cup brown sugar
4 large eggs
1 tsp vanilla extract
1 cup all-purpose flour
1 cup unsweetened cocoa powder
1/2 tsp baking powder
1/4 tsp salt
1 cup semi-sweet chocolate chips
1/2 cup heavy cream
1 tsp peppermint extract
Crushed peppermint candies for garnish

Instructions

1. Preheat your oven to 350°F (175°C) and line a 9x13 inch baking pan with parchment paper.
2. In a microwave-safe bowl, melt the butter and let it cool slightly. Add granulated sugar, brown sugar, eggs, and vanilla extract. Mix until smooth.
3. In another bowl, whisk together flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients until well combined.
4. Stir in the chocolate chips and pour the batter into the prepared baking pan, spreading it evenly.
5. Bake for 25-30 minutes or until a toothpick inserted into the center comes out mostly clean. Let cool completely.
6. For the ganache, heat the cream in a small saucepan over medium heat until it begins to simmer. Remove from heat and stir in peppermint extract.
7. Pour the hot cream over the remaining chocolate chips in a bowl and let sit for 5 minutes, then stir until smooth.
8. Spread the ganache over the cooled brownies and sprinkle with crushed peppermint candies.
9. Allow the ganache to set before cutting into squares and serving.

Storage

Store in an airtight container at room temperature for up to 5 days or refrigerate for up to 1 week.

Reheating

To reheat, warm in the microwave for 10-15 seconds or enjoy at room temperature.
