Ingredients
1 cup unsalted butter, softened
1 cup granulated sugar
1 cup brown sugar, packed
2 large eggs
1 tsp vanilla extract
2 1/4 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
1 cup creamy peanut butter
2 cups semi-sweet chocolate chips
1 cup mini peanut butter cups, halved
Instructions
1. Preheat oven to 350°F (175°C).
2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
3. Beat in eggs one at a time, then stir in the vanilla extract.
4. In another bowl, whisk together the flour, baking soda, and salt.
5. Gradually blend the dry ingredients into the creamed mixture.
6. Fold in the peanut butter and mix until well incorporated.
7. Stir in the chocolate chips and mini peanut butter cups.
8. Drop dough by rounded tablespoons onto ungreased baking sheets.
9. Bake for 10-12 minutes, or until edges are golden brown.
10. Cool on baking sheets for 2 minutes before transferring to wire racks to cool completely.
