Ingredients

2 cups all-purpose flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
3/4 cup unsalted butter, softened
1 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
1 1/2 cups mashed ripe bananas (about 3 bananas)
1/2 cup sour cream
1 cup creamy peanut butter
1/2 cup unsalted butter, softened
2 cups powdered sugar
1 teaspoon vanilla extract
1 tablespoon milk
1/2 cup banana chips
1/4 cup dark chocolate chips

Instructions

1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
3. In a large bowl, cream together 3/4 cup butter and sugar until light and fluffy. Beat in the eggs, one at a time, then stir in 1 teaspoon vanilla extract and mashed bananas.
4. Gradually add the dry ingredients to the banana mixture, alternating with sour cream, until just combined.
5. Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow cakes to cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.
6. To make the frosting, beat together 1 cup peanut butter, 1/2 cup butter, powdered sugar, 1 teaspoon vanilla extract, and milk until smooth and creamy.
7. Place one cake layer on a serving platter and spread with half of the peanut butter frosting. Top with the second cake layer and spread with the remaining frosting.
8. Decorate the top of the cake with banana chips and drizzle with melted dark chocolate. Chill slightly to set the chocolate before serving.

Storage

Store the cake in an airtight container in the refrigerator for up to 5 days.

Reheating
