Ingredients

2 whole-grain tortillas
1/4 cup creamy peanut butter
1/2 cup fresh mixed berries (such as strawberries, blueberries, and raspberries)
1 tablespoon honey
1 tablespoon butter

Instructions

1. Spread half of the peanut butter evenly on one side of each tortilla.
2. Scatter the fresh berries over the peanut butter on one of the tortillas and drizzle with honey.
3. Place the other tortilla, peanut butter side down, on top of the berries to form a quesadilla.
4. Heat a skillet over medium heat and melt the butter.
5. Cook the quesadilla in the skillet for 2-3 minutes on each side, or until golden brown and heated through.
6. Remove from the skillet, let it cool slightly, then cut into wedges and serve warm.
