Ingredients

8 oz spaghetti
1/2 lb pork tenderloin, thinly sliced
2 tbsp soy sauce
1 tbsp fish sauce
1 tbsp sugar
2 cloves garlic, minced
1 cup julienned carrots
1 cup julienned daikon radish
1/2 cup rice vinegar
1 tbsp sugar
1/2 tsp salt
1/2 cup chopped fresh cilantro
1/2 cup chopped fresh mint
1/4 cup sliced jalapeños
2 tbsp mayonnaise
1 tbsp sriracha
2 tbsp olive oil
Salt and pepper to taste

Instructions

1. Marinate the pork: In a bowl, combine soy sauce, fish sauce, sugar, and garlic. Add sliced pork and marinate for at least 30 minutes.
2. Pickle the vegetables: In a jar, combine rice vinegar, 1 tbsp sugar, and salt. Add carrots and daikon, ensuring they are submerged. Let them pickle for at least 30 minutes.
3. Cook pasta: Boil spaghetti according to package instructions until al dente. Drain and set aside.
4. Cook the pork: Heat olive oil in a pan over medium heat. Sauté marinated pork until fully cooked. Remove from heat.
5. Prepare sauce: Mix mayonnaise with sriracha in a small bowl.
6. Combine: In a large bowl, toss cooked pasta with pickled vegetables, cooked pork, fresh herbs, and jalapeños. Add sriracha mayo and mix until well combined.
7. Serve: Portion pasta into bowls and garnish with additional herbs, if desired.
