Oysters Nouveau offers a modern twist on the classic Rockefeller, featuring fresh oysters topped with a vibrant herb and nut crust followed by a tangy citrus glaze.

Ingredients
12 fresh oysters, shucked
1/2 cup unsalted butter
1 tablespoon olive oil
3 cloves garlic, minced
1/2 cup panko breadcrumbs
1/4 cup finely chopped parsley
1/4 cup finely chopped fresh basil
1/4 cup grated Parmesan cheese
1/4 cup toasted pine nuts, chopped
1 teaspoon lemon zest
1 tablespoon fresh lemon juice
1/4 teaspoon red pepper flakes
Salt and black pepper to taste
Instructions
1. Preheat your oven to 450°F (232°C).
2. In a skillet, melt butter with olive oil over medium heat. Add garlic and sauté until fragrant.
3. Stir in panko breadcrumbs, parsley, basil, Parmesan cheese, toasted pine nuts, lemon zest, red pepper flakes, salt, and black pepper. Mix well and remove from heat.
4. Arrange oysters on a baking sheet lined with rock salt to stabilize them.
5. Spoon the breadcrumb mixture evenly over each oyster.
6. Bake in preheated oven for 8-10 minutes, until oysters are cooked and topping is golden brown.
7. Remove from oven and drizzle with fresh lemon juice before serving.
Storage
Store leftover oysters in an airtight container in the refrigerator for up to 2 days.
Reheating
Reheat by placing in a preheated oven at 350°F (177°C) for 5-7 minutes until warmed through.
