Oven-Roasted Beets

Ingredients

2 lbs fresh beets
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
2 tsp fresh thyme leaves

Instructions

1. Preheat oven to 400°F.
2. Wash and peel the beets, then cut into 1-inch cubes.
3. In a bowl, toss beet cubes with olive oil, salt, pepper, and thyme until evenly coated.
4. Spread the beets in a single layer on a baking sheet lined with parchment paper.
5. Roast in the preheated oven for 35-40 minutes, stirring halfway through, until beets are tender and caramelized.
6. Remove from oven and let cool slightly before serving.

Storage

Reheating
