Old-World Roasted Butternut Squash

Ingredients

1 medium butternut squash
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tsp dried thyme

Instructions

1. Preheat the oven to 400°F.
2. Peel and deseed the butternut squash, then cut it into 1-inch cubes.
3. In a large bowl, toss the squash cubes with olive oil, salt, black pepper, and dried thyme until evenly coated.
4. Spread the squash in a single layer on a baking sheet.
5. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the squash is tender and lightly browned.
6. Remove from the oven and serve warm.

Storage

Store the roasted squash in an airtight container in the refrigerator for up to 4 days.

Reheating

Reheat in a preheated 350°F oven for 10-15 minutes or until warmed through.
