Old-Fashioned Strawberry Pie Filling

Ingredients

2 lbs fresh strawberries (hulled and halved)
1 cup granulated sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
1/4 teaspoon salt
1 teaspoon vanilla extract

Instructions

1. In a large saucepan, combine the strawberries and sugar. Cook over medium heat until the strawberries release their juices, about 5 minutes.
2. In a small bowl, mix cornstarch with 2 tablespoons of water to create a smooth slurry.
3. Add the cornstarch slurry, lemon juice, and salt to the saucepan. Stir constantly and cook for another 5 minutes or until the mixture thickens.
4. Remove from heat and stir in the vanilla extract. Allow to cool before using in a pie.

Storage

Store the pie filling in an airtight container in the refrigerator for up to 5 days.

Reheating

To reheat, gently warm the pie filling in a saucepan over low heat, stirring occasionally until heated through.
