Old-Fashioned Pineapple Bread

Ingredients
2 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
1/2 cup crushed pineapple, drained
1/4 cup pineapple juice
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla extract
1/2 cup chopped walnuts (optional)
Instructions
1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
2. In a medium bowl, whisk together the flour, baking soda, and salt.
3. In a large bowl, cream together the butter and sugar until light and fluffy.
4. Add the eggs one at a time, beating well after each addition.
5. Stir in the vanilla extract, crushed pineapple, and pineapple juice.
6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
7. Fold in the chopped walnuts, if using.
8. Pour the batter into the prepared loaf pan and smooth the top.
9. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
10. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Storage
Store the pineapple bread in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
Reheating
To reheat, warm slices in a toaster oven or microwave for a few seconds until just warmed through.
